Bircher Muesli


Initially developed by the swiss physician Max Bircher Benner as a digestive aid for his patients, Bircher quickly became a favourite breakfast dish, light snack or easy early supper. 


1 pink lady apple
1 sml cup apple juice
1 tbsp lemon juice
⅓ cup raisins
⅓ cup almonds/hazelnuts
1 sm cup rolled oats
1-2 cups oat, plant or dairy milk of your choice
½ cup greek yoghurt
A little grated ginger
A pinch of cinnamon and nutmeg
A little honey and choice of fruits to serve

Serves 2 - 4


Pour the apple and lemon juice into a small bowl.

Grate the apple into it. Add the raisins and roughly chopped nuts.

Add a little of the yoghurt and half of the oat milk to start.

Stir the oats in gently, consistency should be quite liquid at this stage, oats will swell as they soak.

Add the spices to your desired taste.

Cover and allow to soak overnight.

Check and adjust consistency before serving. Add more milk if needed.

Top with yoghurt, drizzle with honey and anything else you fancy.
